Bak Chor Mee literally means ‘minced meat noodles’ in the Teochew dialect. Essentially a bowl comprising springy noodles well coated with a mouth-watering tangy chilli sauce and vinegar mix, minced pork and pork lard, this timeless dish is well loved by almost all Singaporeans and it can be eaten at any time of the day.

Despite the existence of different variations, nothing beats a classic Teochew-style bak chor mee. Unlike the usual bak chor mee, its key flavour is derived from fried sole fish and preserved turnip (otherwise known as chai po). They tend to use a lot more vinegar to season the noodles too, which gives it a more tangy and refreshing zing as compared to the regular bak chor mee.

Over at Sembawang Hills Food Centre, indulge in a bowl of this comforting, tangy treat. It may not have won itself a Michelin star for their Teochew-style bak chor mee, but it sure comes close.

Teochew Minced Meat Noodle is a hidden gem at Upper Thomson Road. Not many people might know this but the boss of this humble stall hails from the famous Tai Hwa Pork Noodles, which many would have heard of having won themselves a 1-Michelin Star.

The taste of their bak chor mee is therefore guaranteed to be mindblowing and if you are unwilling to queue at Tai Hwa for hours, this stall is a great alternative since their recipe is pretty similar.

Their Minced Meat Noodle Mee Kia (S$5) comes with a rather small yet decent serving of egg noodles, minced pork, pork wonton and fried sole fish. If you are someone who loves a good amount of vinegar in your bak chor mee, this place is definitely for you. .

We liked that the noodles were generously coated in vinegar and their homemade piquant chilli sauce, and the natural sweetness of the minced meat went really complemented the flavours well. The addition of the fried sole fish added a fragrant aroma and a crispy texture that we thoroughly enjoyed.
