Shi Xiang Ge – Handmade Noodles By Ex-Crystal Jade La Mian Director In Bishan
Conveniently located at level 2 of Bishan Bus Interchange, Shi Xiang Ge is an unpretentious la mian and dumpling stall that’s opened by an ex-Crystal Jade La Mian Director. Specialising in handmade noodles and a myriad of Sichuan-style dishes, this stall is quite possibly our new favourite spot in Bishan for delectable and comforting noodle bowls.
Prior to our visit, we heard many good reviews about this unassuming hawker stall. Despite having high expectations from the very start, Shi Xiang Ge still managed to blow us away with the quality of their noodles and the flavours of their dishes.
Hearty portions, pungent flavours and affordable prices—Shi Xiang Ge strikes all the right chords when it comes to what an excellent hawker stall should possess.
Nestled on the second storey of Bishan Bus Interchange, it is safe to say that Shi Xiang Ge always sees a long queue, especially during dinner time.
Founded by Mr Liu, who used to be the ex-La Mian Director of Crystal Jade for over 10 years and possesses over 28 years of noodle-making experience, Shi Xiang Ge dishes out a variety of stellar noodle dishes as well as to-die-for side dishes.
The Beef La Mian (S$5) is a classic noodle dish you’d commonly find in noodle stalls but Shi Xiang Ge’s rendition is hands-down one of the best that we’ve tried to date. Topped with a generous helping of beef slices and garnishing, you’d be pleased to hear that the serving size of this dish is definitely enough to fill you up no matter how hungry you are.
The broth that came with it was clear and light, unlike those we would expect from Taiwanese beef noodles. Upon first glance, this bowl of noodles may appear seemingly plain and simple but dig in and you’d be blown away by the intensity of flavours that come from the aromatic beef broth.
Boasting the perfect fat-to-lean-meat ratio, the thinly-sliced beef pieces had just the right texture.
For spice-lovers and those looking for a meal that packs a fiery punch, the Hot & Spicy Intestine Shaved Noodles (S$5) would be your best bet. We opted to get ours with hand-shaved noodles. Aptly thick, each piece was shaped differently and had varying lengths—which is exactly the beauty of hand-shaved noodles.
We definitely appreciated that Shi Xiang Ge didn’t go easy with the spice in the broth and how we felt a devilishly numbing sensation on our lips after several mouthfuls, especially after the noodles had soaked up the spicy broth.
Another dish that would go highly recommended by us would be the Poached Szechuan Dumpling in Spicy Sauce. For only S$5, you get 10 huge pieces of dumplings that are doused in a sauce comprising both chilli oil and vinegar.
Biting in, you can expect to find well-marinated pork pieces mixed with crunchy bits of green. While we thought that the dumplings were already flavourful enough on its own, the layer of chilli oil and vinegar that coated the skin only brought out another dimension of pungent flavours to elevate the dish further.
Every element of the dumpling was extremely well-executed and the result is a serving of spicy, flavourful dumplings we’d find ourselves returning for soon. Need we say more?
