Led by a trio of young graduates from the Singapore campus of The Culinary Institute of America, Plum & Rice is an unassuming hawker stall located within the premises of Bedok North Market & Food Centre.
Unlike most other hawker stalls, Plum & Rice stood out because of its Japanese-inspired furnishings and they also serve affordable umeboshi rice sets (S$4) as opposed to bento sets or donburi that regular Japanese stalls would sell.
Umeboshi is a type of salted Japanese plum with multiple health benefits such as aiding digestion, neutralizing fatigue and promoting the elimination of toxins. The pureed plum is then cooked together with rice, which gives the rice its light pink colour.
At Plum & Rice, diners will have the option to enjoy umeboshi rice or porridge alongside braised pork belly or pork shoulder, one side dish and free flow soup – all for just S$4.
We went for the umeboshi rice with braised pork belly (S$4). The umeboshi rice was of a light pink shade and the seaweed toppings made the rice extremely appetising too. There was no hint of saltiness from the plum and the sourness made the rice so darn addictive!
We were also thrilled with the thickness of the slices of braised pork belly served. The pork belly had a melt-in-the-mouth texture with the right balance of salt.
For those who do not prefer braised meat, you can opt for the fish set (S$6) instead. The fish set comprises a side dish, free flow soup, umeboshi rice/porridge and a thick portion of fresh cod topped with a generous portion of spring onion, fried shallots and a light soy sauce dressing.
