A good bowl of laksa is largely dependant on its gravy, and theirs is carefully prepared with a mix of ingredients such as chilli padi, blue ginger, turmeric, belacan, shrimp paste and lemongrass, of which are all fried beforehand to draw out the flavours of each individual ingredient.
The gravy is then cooked low and slow for several hours to allow the flavours to meld together and for the broth to thicken so as to develop its fragrance.
A small claypot of Laksa (S$4.50) is more than enough for even the most famished of individuals due to the broth’s intense richness. Spicy, savoury and incredibly fragrant, we now understand why this humble laksa stall sees snaking queues on a daily basis.
The broth is medium-bodied with a strong hit of coconut and spices. The dish comes with a generous portion of noodles, fish cake and cockles—which is never a bad thing where laksa is concerned. We particularly liked the fact that the claypot really did help the dish to stay piping hot for a longer period of time, which made every mouthful such a joy to eat.
